12 Days of Christmas: Santa's Little Helper Mix

On the second day of Christmas I made a delicious snack sooo quick I even surprised myself. The name needs some work, but this is the epitome of a Christmas trail mix: White chocolate, popcorn, pretzel pieces, and red and green M&Ms. Yummm! Making the mix took under 10 minutes and after chilling were ready to eat in 10 minutes.

You'll Need

Pretzels
White chocolate morsels or white candy melts
Red and green M&Ms
Sprinkles
1 bag of popped popcorn
Powdered Sugar (optional)

Let's Get Started

1. Start lining a cookie sheet with parchment paper or foil and set aside
2. Pop your popcorn on a normal setting in the microwave or stove top and add to a large bowl or to the cookie sheet
3. Add the pretzels pieces, sprinkles and M&Ms to the bowl or cookie sheet
4. In a double boiler, melt the white chocolate stirring frequently until loose
5. Quickly add the melted chocolate to the mix and distribute evenly ensuring all pieces are coated in chocolate
6. Allow to set in the refrigerator for 10-15 minutes or until the white chocolate is hardened
7. Optional, Sprinkle with powdered sugar

Once your mix is cooled you can dig in. I like to store these in large cookie jars because hiding them in tins would be a disgrace to Santa. And yes, these are super sugary and "unhealthy", but Christmas isn't about counting calories, am I right? Come back tomorrow to read my 3rd day of Christmas post.
