Stuffed Portabella Mushrooms Healthy Meal Prep | Let's Eat!



Starting my new-year-new-me off with meal prepping for lunch. I'm sharing my super easy stuffed stuffed mushroom recipe. These delicious portabellas are stuffed with crunchy bell peppers, Italian seasoned ground turkey, and topped with cheese, making the perfect healthy lunch for work.



One of my goals this new year was to be more intentional with how I spend my money. I want to focus on spending less money eating out during the month and making more meals at home. When you work a 9-5, it's really easy to hop on UberEats and order a quick and easy meal. You quite honestly have the world at your oyster in under an hour. Meal delivery is not only dangerously expensive on your pockets, but can be relatively unhealthy after awhile. After realizing how much I've been spending  after calculating taxes, fees and tips, I decided I needed to make a change.

This year, Quinton and I are ready to embark on another big step in our relationship. That which you might be able to guess, but I'm keeping a secret for when the time comes. So excited to share with you all. With all that being said, I knew I needed to stop spending hundreds on lunch each week...I know. 



Another goal this year is to get in the kitchen more often and share the recipes I've been loving. Ahh I'm such a type 5! Starting off the new year, we all have healthy lofty goals that might be hard to keep up come February. But being healthy shouldn't be too much of a burden on anyone's schedule.

Meal prepping is such an important part of making smart eating choices as well as budgeting. By cooking at home, you're able to spend minimally and know what you're eating fits into any diet you might be starting.

These stuffed mushrooms are delicious, filling and importantly, affordable. The best part is that they are totally customizable if you are going the vegan or dairy-free route. You can also sub the peppers if you're looking to lower your carb intake or add a little spice if that's more your thing.



My each pepper, I ate a small side salad and had carrots and a fruit. This kept me full until dinner team even after running around the office all day. I'm having a fun time thinking of ideas to share, but let me know what other videos you'd like to see in my meal prep series.



You'll Need


• 20 oz turkey sausage
• 5 large portabella mushrooms, cleaned
• A half 1 large yellow onion, chopped
• 5 cups bell peppers, chopped seeds removed
• Fresh basil
• 1 8oz can diced tomatoes 
• Italian seasoning
• Salt & Pepper to taste
• Shredded mozzarella cheese
• Olive oil



Let's Get Started


To clean portabella mushrooms, remove the stem and scrape out the gills. Give the mushrooms a washing and dry very well. Drizzle with olive oil and season with salt and pepper to taste. 

To a large pan, cook sausage over medium heat until fully cooked. Season with fresh basil, Italian seasoning and salt and pepper to taste. Remove and set aside. 

To the same pan, drizzle with olive oil, add in the peppers and onions and cook for about 7 minutes over medium heat. Add in the full can of diced tomatoes and ground turkey.
