How to Make Red Velvet Valentine Truffles

Red velvet heart-shaped Valentine's Day truffles made with red, white and pink chocolate and sprinkles.


Valentine's Day is right around the corner and I've been thinking of the perfect dessert to end the night with. Red velvet is one of my favorite cakes. I love the combo of the chocolate and sweetness from the cream cheese. What better way to treat yo self... and your loved one than with red velvet truffles in the shape of adorable hearts.

You'll be amazed with how easy truffles are to make. All you have to do is follow the baking instructions on your favorite mix, plop some frosting in, shape, dip in chocolate and voilĂ . You have your self an easy dessert that would impress just about anybody.

I do have to say, if you're not a sugary sweet type of gal, you might need to make a few modifications. First swap is to use actual cream cheese instead of the frosting. This will cut down on the sweetness tremendously.

Instructions

You'll Need


• 1 box red velvet cake mix, follow ingredients list
• 1 container cream cheese frosting  (optional 1 8oz block cream cheese)
• 1 bag white candy melts
• 1 bag red candy melts
• 1 bag pink candy melts
• heart sprinkles





Let's Get Started


Begin by following the instructions to the red velvet cake mix. After the cake has finished baking, let it cool completely. 

Crumble up the cooled cake into a large bowl. Add roughly 1 cup of cream cheese frosting  to the bowl and combine using a wooden spoon. Mix for about 5 minutes. Your mixture is ready when you can form it into a ball and it'll hold shape. 

*Be careful of adding in too much frosting. It may seem dry at first, but it will take the cake a bit of time to absorb the moisture of the frosting. 

*Your mixture should be smooth but stuff. Kind of like cookie dough. A bit like stiff cookie dough.


Once the dough is ready, roll into a 1 inch ball. Using the palm of your hand, flatten the dough on top, then flatten the sides into a square. Using a knife or baking spatula, cut the sides into a "v". This should give you a triangle shape. Then cut a small v on top. Your dough should look like a heart. 

Place on a parchment lined baking sheet set in the freezer for 30 minutes to 1 hour. This will allow the cake to harden up and prevent cracking or lifting during the dipping process. 

In a microwave safe bowl, melt the candy melts according to the directions on the package.

Take the truffles out of the fridge and using a fork, dip the truffle into the chocolate. Using a spoon, ensure the tops and sides are fully covered. Next, lift the truffle up and tap against the edge of the bowl or give it a quick shake. This will remove any excess chocolate, pop air bubbles and ensure the chocolate is smooth. Transfer to a lined baking sheet and immediately top with your favorite sprinkles. 

* My tip to ensure you have perfect truffles is to keep the truffles cold. You can do this by setting them back in the fridge between chocolate dippings. This will ensure they hold their shape when dipping in the melted chocolate.


Once set, your truffles are ready to eat. You can keep them in the fridge for a few days or pop them in the freezer for a week or two.
