Valentine's Day can be tough if you're a single gal like me. Your feed is filled with roses no one gave you.  Every one is in love, happy, and getting engaged while I'm over here talking to my dog about prior life choicesInstead of celebrating Single Awareness Day and loathing the engagement announcements, I choose to fill my day full of love and sweets. Lots and lots of sweets.

Valentine's Day ombre cupcakes with heart sprinkles

Ingredients

1 box of Duncan Hines Classic White cake mix
3 egg whites
1 cup water
1/4 cup oil
1 container of Duncan Hines Classic Vanilla frosting
Red food coloring
Decorative sprinkles
White baking cups

  1. Preheat oven to 350° F. Make cake batter as directed.
  2. Separate cake batter evenly into three bowls. To the first bowl, add 4 drops of red food coloring and stir until color is even. In the second bowl, add 2 drops of red food coloring. With a clean spoon, stir until the color is even. Leave the second bowl white. You should have dark pink, light pink and white batters. 
  3. Place a baking cup into 24 cupcake tins.
  4. Fill each baking cup with a spoonful of the dark pink batter. Use a spoon to spread evenly.
  5. Carefully spoon the light pink batter on top of the dark pink.Gently use a spoon to spread the mix so that it covers the white. Be careful not to dip the spoon to hard into the mix.
  6. Finish the layer with the white batter and spread with a clean spoon. 
  7. Bake immediately for 18-21 minutes.
  8. When done, let cool for 15 minutes before frosting.
  9. Pipe frosting on each cupcake then add sprinkles.
